They've actually revamped their fare structure and reduced their number of fares to just 3 fares:

Premium - Business/Premium Economy fare. Changes are fully flex. Includes lounge access and priority boarding
Flexi - Fully flexible Economy fare. Includes onboard catering, IFE and luggage, priority boarding.
Saver - Buy onboard catering/IFE, luggage costs extra, changes incur penalties.
The Saver fares are obviously designed to attract cost conscious leisure travellers who'd otherwise fly Jetstar or Tiger, whilst the Flexi fares are targetted at the business market.
Doing a dummy booking for MEL-SYD on 23Jun reveals the following fare levels on the more popular, peak hour flight times:
Premium - $425 (Premium Economy)
Flexi - $199
Saver - $109 (though when on sale Saver fares drop down to as low as $75)
The Flexi fare is especially fantastic value for corporate travellers, as the equivalent fare on Qantas on the same segment (Fully Flexi) can cost up to 3 times as much. It provides a full service Economy experience, and total flexibility on cancellations, changes, standbys on earlier flights etc.
The value of the Saver fare is questionable unless on Sale. A Qantas red e-deal costs about the same but you get onboard catering and a luggage allowance with your fare. There should be a fare between Saver and Flexi for those who want the extra frills but have no need for the flexibility of the Flexi fare rules.
This fare structure only applies to domestic and regional destinations. Long haul flights operated by V Australia will have a different fare structure given V Australia is completely full service.
