    Not the weekend I expected it to be. Haze starting to blanket Singapore yet again, and the sad news of MH370 missing enroute to Beijing. Especially as I am about to head to Beijing on SQ's red-eye tomorrow.

    I hope they get to the bottom of what happened to MH370. As it is, I suspect am going to have problems sleeping on my SQ flight tomorrow (as if a redeye in Y is not challenging enough), knowing what probably happened to its brother MH370 on a routing not too different from mine, on my upcoming flight SQ800 SIN-PEK.

    Still jetlagged from a recent trip to London and Barcelona, I doubt anything worthwhile will happen tomorrow on my SQ flight SIN-PEK to warrant a TR...but a routine flight (where the plane arrives) is an underrated event, and I sure hope it is a boring flight that gets me from A to B. My thoughts and prayers go out to anyone who had loved ones on MH370. I hope they find out what happened.

    Just as well, this post is about something which did not involve any flying at all on my part.

    I thought I would share a memorable meal I had at Hide Yamamoto at Marina Bay Sands in Singapore recently. This is a Japanese restaurant in Singapore, at MBS, lumped under the banner "celebrity chefs", however, unlike some of the other overpriced, overhyped celebrity chefs at MBS (I won't name names here ), this gentleman delivers the goods: my wife and I had a very memorable (if impromptu) birthday lunch (hers, not mine...) here recently.

    So, sort of a "staycation" thread coming up, around a very memorable lunch at Hide Yamamoto...

    I was headed off that evening on a business trip, but somehow I had an open calender for lunch that day, and my wife and I seized the opportunity to celebrate her birthday at Hide Yamamoto at Marina Bay Sands.

    She arrived first (she takes her food seriously) and WhatsApp'd me when she arrived "they have charcoal grilled chicken stuffed with rice and black truffle...you need to order when you arrive, and it takes 30-45 min to prepare. Shall we order?"...

    "Yes go ahead" I replied...(as if I had a choice) but I generally leave the dining choices to her and have never been disappointed.

    This place doesn't even allow you to pre-order this dish. If you want it, show up, order, and they will begin the long process...

      We began with Hide Yamamoto's take on Caeser Salad...



      Not your traditional Caeser's, but quite delicious.

      The "crackers" were made out of small fried fish...

        Our main course was the barbequed chicken with truffle...this had already spent some time in the oven, and was now brought out to the open grill...

          Our highly skilled chef (not Hide Yamamoto himself, but a gifted member of the Singapore staff...) then began to slice the chicken...



          ...and place the different pieces back on the grill...

            After the chicken pieces were laid out on the wooden plate, the carcass was expertly split into two to reveal the stuffing, which was sticky rice infused with black truffle. The two halves of the chicken carcass were further barbequed for a little while on the grill.



            As a final step, fresh truffle was grated into thin slices onto the top of the chicken.

              It was time to tuck in, and this dish was absolutely delicious. Some of the best, if not THE best, chicken dish I have had in a very long while. The smoky barbecued aroma was rich and intense, the flesh tender and moist, and there was almost no oil or grease apparent.



              The rice and truffle flavours complemented, but did not overwhelm, the taste of the chicken.



              A remarkable dish, one of Chef Yamamoto's signature creations.

                We finished off with dessert, a selection of various icy and chocolatey/nutty treats, beautifully presented.

                  This restaurant is within the Marina Bay Sands Integrated Resort, not in the iconic 3 towers with the cantilevered platform and rooftop infinity pool, but in the adjoining waterfront casino and shopping complex near ground level.



                  You don't need to enter the casino to dine at the restaurant, and in fact, the way into the restaurant gives you a very good view of the main casino floor. This was the first time I had ever seen the actual casino gaming floor, as I never felt it worthwhile to cough up the $100 entry fee that Singaporeans have to pay to enter.

                  Here is another view of MBS, taken from Gardens by the Bay East...a beautiful park on the Eastern side, connected to Gardens by the Bay South by the Marina Barrage.



                  Restaurant aside, the Gardens by the Bay are worth a visit if you are visiting Singapore, and have an afternoon or a weekend to spare.

                  Last two pics here were taken earlier this afternoon. Thankfully the haze has lifted a little!

                            You are welcome! At $68 for a whole chicken, which feeds two, this represents amazing value, considering how delicious it is.
